Jamie Oliver reveals how to cook the PERFECT roast potatoes – and the little-known step to make them extra crispy

You can’t have a roast dinner without them – but it can be tricky to get roast potatoes perfectly golden and crisp on the outside, while remaining soft in the middle.

Thankfully, British TV chef Jamie Oliver has revealed his step-by-step guide for the perfect roasties just in time for Sunday. 

In a video for his TikTok account, the 47-year-old father-of-five shared his ’11/10 roast potato recipe’ – including the little-known hack to making them extra crispy.

Introducing the ‘perfect roast potato… crispy outside and fluffy inside’, he explained: ‘I’ve got them parboiling in here, in salted boiling water.’

Showing the potatoes in a pan, he said he’d be cooking them for around ten minutes before draining them in a colander when ‘they’re just thinking about breaking up’.

He then added a tablespoon each of oil and red wine vinegar to a tray before shaking the potatoes in the colander, adding: ‘Look what I’m doing. See how I’ve beaten them up?’ 

Jamie continued: ‘I’m gonna cook these in an oven at about 180/190, which is about 350 Fahrenheit, over the period of about 50 minutes.’

After around 40 minutes of cooking time, the chef took the potatoes out of the oven and used a potato masher to gently press each of the roasties down. 

He explained: ‘Take the tray out of the oven after 40 minutes, place the potato masher on top, and then just let it pop and let the lovely starchy inside just puff out.

‘Just do that around the whole tray and then pop it back in for another 10 minutes. Crispy and fluffy.’

Jamie’s clip – posted earlier this week – impressed TikTok users, with one person writing: ‘Yup, I’m doing this!’

Another person said: ‘Oh, I love those. Extra crispy, soft middle… melts in your mouth.’

However, one individual admitted: ‘I always do my potatoes like this, and they’re always incredible.’
