Tucked away behind the doors of an old 1870s tobacco factory that thousands pass on their way to work every day lies a spectacular escape from reality.

Few passers-by are aware that the heritage façade – which is one of Sydney‘s most beautiful buildings – has now become The Porter House Hotel, MGallery’s newest multi-million dollar luxury offering. 

Located on Castlereagh Street in the CBD, the sleek new getaway occupies the first 10 floors of a 36-storey mixed-use tower within the new precinct and offers two new restaurants, a moody bar and a stunning rooftop pool.

The hotel, which is the only one in Australia to offer an iPad concierge to guide guests through the space - offers 122 guest rooms and suites - Classic Room, Superior Room and Junior Suite - and rates start at $379 a night

The building was originally commissioned in 1876 by Australia’s leading tobacco manufacturer and horticulturalist Hugh Dixson so the Porter House started life as Dixson & Sons tobacco factory and warehouse – the namesake of the hotel’s first-floor hatted restaurant. 

Now transformed into an ‘urban sanctuary’, the hotel was designed by award-winning architect Angelo Candelapas of Candelapas Associates and pays homage to the Victorian commercial era with curved windows that reference the original building’s iconic brick archway and accents of leather and pressed tin.

The hotel, which is the only one in Australia to offer an iPad concierge to guide guests through the space, offers 122 guest rooms and suites – the Classic Room, Superior Room and Junior Suite – starting from $379 a night.

All guests have access to the fitness centre and a sparkling 12.5sqm heated pool located on the rooftop, surrounded by a rooftop garden and blue skies

Designed for up to two guests, each Classic and Superior room comes with a king bed and a large 65cm television while the four Junior Suites accommodate up to three guests, with a separate king bedroom and living space.  

For larger groups staying together the hotel offers six interconnecting rooms, six disability rooms and one pet-friendly room.

All guests have access to the fitness centre and a sparkling 12.5sqm heated pool located on the rooftop, surrounded by a rooftop garden.

The food and beverage offering is where guests are truly treated, however, with three different venues sat across four redeveloped levels of the original building.

Vannella Stracciatella Served with Grilled Zucchini and Watercress Chimichurri.

Vannella cheese brings traditional practices of cheese making from their origins in Italy’s southern Puglia to their cheese factory in Marrickville. Stracciatella is the decadent filling that hides at the heart of the burrata. Served with Grilled Zucchini and Watercress Chimichurri which is made with chopped fresh parsley, oregano. Garlic, olive oil, vinegar and red pepper flakes.

Wine: Given its very delicate flavour, it is going to pair with 2021 Oliver’s Taranga Vineyards Vermentino 

Zesty lemony acid, fresh honey florals and sea breeze, touch of fruit tingle on the finish.

Cured Blue Mackerel 

Blue Mackerel are a schooling pelagic species that occurs in tropical and temperate waters of the Pacific Ocean. A cure of salt and sugar can enhance the already delicate flavour of a fish such as mackerel. The salt and sugar draw moisture from the flesh, firming the texture as well as seasoning it. 

Wine: My advice is 2020, Chateau de Parnay Blason Blanc Chenin Blanc, Loire Valley, France. 

Apricot and pear in the bouquet. Slightly acidic in the palate, but mild aftertaste. On the nose, exotic citrus scent add a delightful freshness that blends wonderfully with the terroir’s limestone minerality.

Charcuterie: Selection of cold cut meats, served with Condiments & Bread

Wine: 2021 Tar & Roses Sangiovese – Heathcote & Central, Victoria.

A little rough and woody, which prevents this from being a really solid wine. Strawberry, nutmeg, white pepper, and blackcurrant aromas leap from the glass. Medium light body, very tannic and acidic, with prominent pepper, and gorgeous cherry, tar, tomato and asparagus flavour.

A level above sits Dixson & Sons, which has just been awarded a hat in the Australian Good Food Guide Awards for 2023.

Bustling with foodies in the know, the outstanding eatery and incredibly knowledgeable staff deliver executive chef Emrys Jones’ menu to perfection. 

The restaurant is named after the founding merchant family and offers two semi-private dining spaces, banquettes and intimate tables for two, as well as a carefully considered menu that champions local produce.

Standouts include summer corn ravioli with Korean chili dressing and parmesan, soy glazed barbequed Gundagai lamb rump with apricot and saltbush and cured blue mackerel.

The cocktail and wine list is equally as impressive, with signature tipples including The Spice Trail (spiced vodka with cranberry mors, garnished with cinnamon quill and star anise) and the Bees Knees (Australian green ant gin, ginger spice infused honey and lemon juice, garnish with a lemon wheel and crystallised ginger).

Finally, on the top level of the hotel lies Spice Trader, a rooftop cocktail bar that promises to ‘transport you to all corners of the world, one sip at a time’.

The cocktail list is organised based on ingredients, with standouts including the Penicillin (Ferrand Cognac, ginger, honey, lemon and a Talisker float), Piña Verde (Plantation Stiggins fancy pineapple, green Chartreuse, coconut cream and pineapple) and the Quickdraw (Los Arcos Tequila, jalapeño Agave, lime, Ancho and Cassia spice salt).
